Fresh Cauliflower Rice
- 1/2 head of Cauliflower
- Splash of coconut oil
- 1/2 yellow onion, chopped
- 1 cloves of garlic, minced
- Salt & pepper to taste
- Rinse cauliflower & break into chunks
- With a cheese grater, grate cauliflower to a course texture.
- Heat the coconut oil in a skillet over medium heat.
- Sauté the onions & garlic until translucent.
- Add the cauliflower rice & continue to sauté for about 5 mixtures.
- Season with salt & pepper and enjoy..
